I know I’ve said it before but there’s nothing like the combination of banana and chocolate!
INGREDIENTS
For the cake
3 bananas
¼ cup of coconut sugar
½ cup almond milk
100 g dark chocolate
½ cup coconut oil
4 eggs
1,5 dessert spoons baking powder ( 1tsp U.S.)
1,5 dessert vanilla extract ( 1tsp U.S.)
¾ cup almond flour
½ cup ground flaxseeds
¼ cup raw cacao powder
For the chocolate icing
¾ cup coconut milk
1,5dessert spoons maple syrup ( 1tsp U.S.)
60g dark chocolate
4,5dessert spoons cacao powder ( 3tsp U.S.)
Method
- Preheat the oven to 180C (350F)
- Melt the chocolate, sugar, almond milk and coconut oil at low heat.
- Mash the bananas, add the melted mixture and stir well. Beat the eggs and vanilla. Add the flour, flaxseeds, cacao and baking powder.
- Add this mixture stir until smooth.
- Bake in the oven for an hour or until a skewer comes out clean.
- Cool it before transferring to a plate.
For the chocolate icing
- Cream together maple syrup, coconut milk, cacao powder, and chocolate at low heat. Bring to a boil, stirring constantly until well combined.
- Pour the icing over the cake and spread evenly. Top with fruits, nuts or both.
