You might think that “salad cake” (or cake salad) comes from the USA, but no, it’s the work of Japanese food stylist Mitsuki Moriyasu. She has put her talents to work for epicures who don’t want to put on weight, by making vegetables and fruits the basis for a cake.

And you can believe it. This patisserie with its candy colours really does look like gateaux or cakes. A bit kitsch, yes, but tasty. But all is not what it seems.

Check out the ingredients

They don’t contain any fat, sugar or gluten. They do contain vegetables, fruits and flowers. The icing and sponge are really convincing, and make them look like US-style cupcakes. However they are much less fattening, because they’re based on soy flour, tofu and other healthy ingredients with our stylist’s unique touch. People who have tasted them say that they’re delicious. They’re the perfect cakes if you want to treat yourself, but you don’t want to feel guilty about it.

However, you’ll have to go to Japan to find them. Specifically, to Nagoya and the food stylist’s Vegedeco Salad® Cafe, where you can eat them with a cup of tea or take them away for a birthday … surprise.

We weren’t able to find a single “salad cake from Japan” recipe on the internet, but it can’t be long now!
